Outing: I'm a Skagen salmon enthusiast now ;-)

A new passion for Skagen salmon: How I discovered the local salmon farm as a tour guide and now cook creatively with fresh fish.

Outing: I'm a Skagen salmon enthusiast now ;-) 25.02.2026

We eat little meat. Although the meat here in Denmark is actually really delicious and we have a wonderful butcher here in town. But it's just worked out that we often eat vegetarian or fish-rich meals.

I think I mentioned it back in December that we have a salmon farm here in Skagen that's actually quite outstanding. It's supplied with filtered seawater, and the salmon go through all their stages there. They arrive as eggs from Iceland, are fertilized in this farm, and for the next few weeks they live off their yolk sacs. After that, they're moved into appropriate tanks and go through several stages. At around two years old and four kilos, they're ready for slaughter. That happens there too.

Last year, we Skagen tour guides were asked if we'd be willing to offer tours at this salmon farm. At first, I was a bit taken aback, but then I looked into it and said yes. Yes, because the concept convinced me. Because the heat generated there is passed on and fed into the district heating network. This cycle is very fascinating and I'll write about it in another blog post. But it's really fascinating and actually more demanding than you'd think. So I decided to do it.

On Monday we had training there and it was a really interesting and exciting afternoon. We got to buy fresh salmon, and today I first made tagliatelle with salmon and fresh spinach in the oven. While that delicious lunch was simmering away, I made sushi for a quick meal. I bathed this wonderful firm salmon briefly in lemon, garlic and olive oil, then layered it with avocado on nori sheets and sushi rice. That'll be lunch for tomorrow.

And there's still a nice piece left for Friday, actually the nicest piece, and I've decided to prepare oven-baked salmon. A handful of salad to go with it and a nice piece of spelt bread. I also baked spelt bread today in between everything else.

It just worked out that way, because yesterday was a very intense day in Skagen with the new and some of the old tour guides. We met for a little walking tour, went to the museum, and late afternoon into the evening we had a little class about the artists. It was very interesting, it was exciting, I even learned something new, and I really had fun. But I was out and about for ten hours yesterday.

And today I could take it a bit easier. A bit of gym, a bit of baking, a bit of cooking, a bit of preparing, and if my husband has some time later, we'll practice a few songs that were learned in the choir last week — I missed that week. I was traveling in Germany. And then we'll head off to choir practice.

I'm really looking forward to it. It's a wonderful feeling to be here, to be part of it, and especially because tonight after choir it's going to be really hygge with all my colleagues and new friends.
