Danish Covered Apple Cake, A Recipe from the Neighborhood

A classic covered apple cake with a delicate cream cheese dough, juicy apple filling, and lemon glaze.

Due to persistent winds, our cruise ship was cancelled for today. That means "weather day off" for me. It's a shame, really, because the season is winding down and you're always happy for another day to earn a little money.

But I won't be bored anyway, and since electricity is so cheap this morning, I've loaded up the washing machine, tackled all the household chores, and then baked this delicious apple cake after breakfast.

Here's the recipe:

Danish Covered Apple Cake

A classic covered apple cake with a delicate cream cheese dough, juicy apple filling, and lemon glaze.

Ingredients

For the Dough

  • 230 g flour
  • 75 g butter
  • 180 g Greek yogurt
  • 1 pinch of salt

You'll want to check if you can add a bit more flour—the dough should become slightly "crumbly"...

For the Apple Filling

  • 500 g apples (measured after peeling and slicing)
  • 1 tbsp lemon juice
  • 140 g sugar
  • 3/4 tsp cinnamon
  • 2 tbsp ground breadcrumbs
  • 1 tbsp cornstarch
  • 20 g butter

Also

  • 3 tbsp milk or cream for brushing

For the Glaze

  • 100 g powdered sugar or more, as needed
  • 2 tbsp lemon juice

Instructions

1. Prepare the apples: Peel the apples, remove the cores, and slice them thinly. Toss with the lemon juice.

2. Make the filling: Mix the sugar, cinnamon, breadcrumbs, and cornstarch together, then fold thoroughly into the apple slices.

3. Prepare the dough: Knead the flour, butter, cream cheese, and salt into a smooth dough—easiest done with a food processor.

4. Roll out the cake base: Divide the dough in half. Roll one half thinly between two sheets of plastic wrap and place it in a greased cake or springform pan. Pull up a small edge all around.

5. Fill: Distribute the apple mixture evenly over the dough. Cut the 20 g butter into small pieces and scatter over the top.

6. Add the top crust: Roll out the second half of the dough thinly as well. Cut a few small slits so steam can escape while baking. Lay the dough over the apples and press the edges together firmly.

7. Brush and bake: Brush the top crust with milk. Bake at 225 °C (both top and bottom heat) for about 45 minutes until the cake is a lovely golden brown. If the toothpick test needs more time, cover with baking paper...

8. Glaze: Stir the powdered sugar and lemon juice into a smooth glaze. Brush over the warm cake.

Let cool completely before slicing—that's when the Danish covered apple cake cuts most beautifully.
