Apple Cake with Hazelnuts

A wonderfully moist apple cake with cinnamon and hazelnuts, packed with apple pieces right throughout the batter.

Today I baked an apple cake with hazelnut batter.

The recipe is brilliant. Simple and quick.

Give it a try:

A wonderfully moist apple cake with cinnamon and hazelnuts, packed with apple pieces right throughout the batter.

Ingredients

For a springform pan of about 26 cm:

6 apples 4 eggs 100 g sugar 125 g soft butter Vanilla extract or 1 packet of vanilla sugar 1.5 tsp cinnamon 100 g flour 100 g ground hazelnuts 4 g baking powder some butter for greasing the pan or parchment paper Powdered sugar for dusting

Instructions

1. Separate the eggs Separate the eggs. Place the egg whites in a separate bowl and set aside for now. Put the egg yolks in a large mixing bowl.

2. Beat egg yolks and sugar Add the sugar to the egg yolks and beat with a hand mixer for a few minutes until light and beautifully fluffy.

3. Add butter, vanilla, and cinnamon Add the soft butter, vanilla, and cinnamon to the egg yolk and sugar mixture and stir thoroughly until you have an even mixture.

4. Make the hazelnut batter Mix the flour, ground hazelnuts, and baking powder together and then fold into the butter and egg yolk mixture.

5. Prepare the apples Peel all 6 apples, quarter them, and remove the cores. Then cut the apples into pieces about 1.5 cm in size.

Add the apple pieces completely to the batter and gently fold them in so they're distributed as evenly as possible throughout the batter.

6. Fold in the meringue Beat the egg whites until stiff. Then gently fold the meringue into the apple and hazelnut batter in portions. Don't stir vigorously anymore so that as much air as possible remains in the batter.

7. Baking Grease a springform pan of about 26 cm diameter or line it with parchment paper. Pour the batter in and smooth the top.

Bake the cake at 170 °C with convection for about 45 minutes. Toward the end, check with a wooden skewer to see if the cake is baked through.

8. Cool and dust with powdered sugar Let the finished cake cool a little in the pan first and then let it cool completely.

Once the cake has cooled, dust it generously and evenly with powdered sugar.

And sorry, this time there aren't many pretty photos. The cake was sliced and turned out to be so delicious that we simply forgot to style the cake and take pictures...

The recipe is brilliant. Simple and quick.
